Based on the name, it's understandable to think that this coffee at some point sat in a tank filled with oranges. While the process didn't happen exactly like that, it's also not that far off. During the aerobic fermentation and acetic process the juice from the coffee cherry (at which the "bean" lies in the center") is extracted, stored, and then reintroduced during anaerobic processing. This helps bring out the citrus and sweet notes of the Castillo variety, and lends to why this delicious coffee is called Orange Washed. You'll get a bright cup that has notes of citrus fruits such as clementines, and sweet notes like caramel. A robust and lively cup.
