From the Colombian town of San Agustín in Huila, this is the El Rancho Pink Bourbon. It was produced by the Cadefhuila collective, and underwent thorough processing at the farm that included fermentation both before and after the coffee cherry was de-pulped, a double rinsing, and thermally shocking the coffee before final drying. The result is a luxuriously balanced cup of coffee, with floral and citrus fruit notes hanging out in the background.
